Pumpkin Spice Muffins


Princess P and I decided to make some breakfast treats. She was a great little helper. She did everything except placing the muffins in the oven. We made two different kids Banana Nut and Pumpkin Spice.

Here is the recipe for the Pumpkin Spice Muffins.

2 cups flour

2 tsp. baking powder

1/2 tsp. baking soda

1/2 tsp. salt

1 tsp. cinnamon

1/2 tsp. ginger

1/2 tsp. nutmeg

1 can(15 oz.) of pumpkin puree

1/3 cup butter, melted

1/2 cup milk

1/2 cup brown sugar firmly packed

1/4 cup sugar

2 large eggs beaten

1 tsp. vanilla

1 cup raisins (or nuts)

Cinnamon/Sugar for topping(optional)

Preheat oven to 375 degrees.

In a bowl combine flour, baking powder, baking soda, salt, cinnamon, ginger, and nutmeg. In a separate bowl, combine pumpkin  puree, melted butter, milk, eggs, brown sugar, sugar, and vanilla. Mix well. Add pumpkin mixture to the flour mixture. Mix until moistened. Fold in the raisins. Be careful not to over mix. Spoon mixture into prepared muffin pans. I used cupcake liners. Fill the liners half way. Sprinkle with the cinnamon sugar mixture. Bake for 20-25 minutes.

Makes 32 muffins.
